This recipe is adapted from Trader Joe and it’s easy to make in just 15 minutes.

If you prefer something a little bit more savory, try Trader Joe, or try this simple pesto shrimp salad.

Ingredients 1 pound ground shrimp, trimmed and cut into bite-sized pieces 1 tablespoon olive oil, plus more for frying 1 medium sweet onion, diced 1 tablespoon garlic, minced 1 tablespoon red wine vinegar, or to taste 1 teaspoon red pepper flakes 1/4 teaspoon paprika 1/2 teaspoon salt 2 tablespoons olive oil 1/3 cup pesto sauce, such as Trader Joe or pesto grated, plus extra for frying Directions Heat oil in a small skillet over medium heat.

Add onions, garlic and red wine.

Saute until translucent.

Add vinegar and cook, stirring, until the onion and garlic soften and become soft, about 5 minutes.

Add red wine and cook for another minute.

Add tomatoes, salt and paprika and cook another minute or two.

Add olive oil and pesto.

Stir in tomatoes, red wine, red pepper, paprika, and salt and cook until sauce thickens and the shrimp is tender, about 30 minutes.

Serve with pesto pesto chips.

Notes This is a great dish for a weeknight dinner.

You can easily reheat in the oven, but it will be very soft and slightly spongy.

For a nice, crisp crust, serve with a drizzle of olive oil on the side.
