How to make the best shrimp pestos at home
Ingredients: 1 head shrimp, halved and cut into 3-inch dice (or a 1/2 cup) 1/4 cup chopped fresh basil 1/8 cup finely chopped fresh mint 1/3 cup grated Parmesan cheese Directions: Heat olive oil in a large frying pan over medium-high heat.
Add the chopped shrimp, add salt and pepper to taste, and sauté for 5-10 minutes.
Add garlic and cook for about 3 minutes.
Remove from heat, add basil and mint, and continue to cook for another 2-3 minutes, stirring occasionally.
Add Parmesan and continue cooking for another minute.
Add grated cheese and cook until the mixture starts to brown, stirring frequently.
Sprinkle over shrimp and toss well.
Recipe Notes If you like to have more shrimp than a regular shrimp pesta, add a dash of lemon juice to taste.
